Recipe: Chipotle Inspired Burrito Bowl Pt. 1

So, this reciepe has changed quite a bit since I took the pics for this one but I thought I would show it anyway in case some of you are really basic and don’t care for the extra pizzazz. I will have the newer version soon when I cook it again.

Ingredients:

Chicken
Rice
Lime
Cilantro
Onions
Green Peppers
Various Spices of your choices [I chose: Basil, Parsley, Grill Creations, and Oregano]

1. Cook your rice.

2. After letting your chicken defrost, place in a pot and place seasonings, mix and let cook for about 10 minutes, depending on how cold your chicken still is.

3. Slice your green peppers and onions in long stripes. Break your onions from their layers so that they cook easier. Place both onions and green peppers in the pot after you have made chicken and add seasonings as needed. The seasonings from the chicken left over should add enough flavor without being too strong.

4. After squeezing your lime, place cooked rice into the pot and add lime juice and cilantro. Mix both in and taste, add seasonings as needed but be reminded that the chicken is already packed with a lot of flavor.

5. When your rice has been mixed, put your green peppers and chicken in and mix. You will want everything to be the same temperature.

Note: If you would like to save your chicken for later and to make it more Chipotle-sized, dice your chicken so that you have more than enough. Chicken strips, like the one I used, would have been a little more difficult to get a good bite without struggling.
